Pan Seared Smoked Chicken Wings

Large Chicken Wings 3 - 5 lbs. (Sams Club)
5 tbsp.
Vegetable Oil
To taste
Salt
1/8 cup
Your Favorite Chicken Rub or
Eric's Chicken Rub
Approximate cook time is 1 1/2 hours plus searing time.
Cooking Instructions:
Heat your pellet smoker to 300 – 325 degrees.
Rinse the chicken wings with cold water.
Pat them down with paper towels.
In a large foil pan, add the chicken wings, skin side up and drizzle the vegetable oil on top of the wings.
I use a spray bottle for this step.
Generously sprinkle the rub mixture over the wings.
Smoke until the internal temperature is 170 - 175 degrees.
Heat a non-stick skillet and coat the bottom with additional vegetable oil.
Salt to taste.
Sear the skin side of the wings until golden brown. Let cool for 5 minutes and serve.
