Classic 3-2-1 ribs - 3 hours smoke, 2 hours wrapped, and 1 unwrapped.

Baby-back or spare ribs
Cooking Instructions:

Remove the silver membrane from the ribs.

Rinse with water and pat dry with a paper towel.

Season all exposed surfaces with the dry rub.

Heat the smoker to 225°F.

Lay the rack(s) directly on the grate. Bone side down.

Smoke the ribs for 3 hours. (You may want to spritz the ribs each hour with apple juice for additional moisture)

Remove the ribs from the smoker. Create a double layer foil “boat” and lay the rack of ribs on it (bone side down). One rack per foil "boat".
Pour a 1/4 cup of apple juice into the foil and wrap the ribs as tightly as possible.

Smoke the ribs for 2 hours.

Remove the foil, coat the ribs in BBQ sauce or spritz the ribs with apple juice.

Place the ribs back in the smoker for 1 hour. Remove from the smoker when they reach 175-195°F.

Rest the meat for 30 minutes.

Slice and serve.
