Cooking Instructions:

  • Remove the silver membrane from the ribs.
  • Rinse with water and pat dry with a paper towel.
  • Season all exposed surfaces with the dry rub.
  • Heat the smoker to 225°F.
  • Lay the rack(s) directly on the grate. Bone side down.
  • Smoke the ribs for 3 hours. (You may want to spritz the ribs each hour with apple juice for additional moisture)
  • Remove the ribs from the smoker. Create a double layer foil “boat” and lay the rack of ribs on it (bone side down). One rack per foil "boat". Pour a 1/4 cup of apple juice into the foil and wrap the ribs as tightly as possible.
  • Smoke the ribs for 2 hours.
  • Remove the foil, coat the ribs in BBQ sauce or spritz the ribs with apple juice.
  • Place the ribs back in the smoker for 1 hour. Remove from the smoker when they reach 175-195°F.
  • Rest the meat for 30 minutes.
  • Slice and serve.
