Smoked Sweet Potatoes

Ingredients
4 ea.
Sweet potatoes
2 tsp.
Vegetable oil
To taste.
Butter
To taste.
Cinnamon
Cooking Instructions:
Using a fork, poke holes in the top of the potatoes.
Bake sweet potatoes in their skins (uncovered in oven) or microwave (covered in clear plastic wrap) until tender.
Heat the smoker to 200 - 225°F.
Brush the vegetable oil onto the potatoes.
Cut an ‘X’ in the top of each potato.
Squeeze the bottom of the potatoes to push the orange flesh up through the cut in the skin; but not so far up that it falls out.
Place the potatoes in a foil pan and place it on the smoker rack, uncovered.
Smoke for 30 minutes.
Put butter and cinnamon on the top of each potato and serve.
